Bodfish Bob's Cowboy Potatoes

Ingredients:

8 slices bacon, diced
2 med onions, diced
8 med potatoes, sliced
1/2 tsp salt
1/4 tsp pepper
2 c. shredded cheddar cheese

Preparation:

In a deep 12-inch skillet or Dutch oven, cook bacon.

Set aside bacon and remove all but 1 tablespoon of drippings.

Cook onions until soft and add potatoes salt and pepper.

Cook, covered, 35 to 40 minutes, until potatoes are tender, stirring occasionally.

Stir in bacon and remove from heat until cheese is melted.

Serves 6-8.
