A favorite of the
locals at Betty's Bistro in downtown Bodfish.
Ingredients:
6 eggs
1/4 c. mayonnaise
2 Tbsp. Finely chopped onion
3 Tbsp. Sweet pickle relish
1 Tbsp. Prepared horseradish
1 Tbsp. Prepared mustard
Salt and Pepper to taste
Paprika, for garnish
Preparation:
Hard boil eggs and cut in half lengthwise.
Remove yolks from eggs.
In a medium bowl, mash the yolks and mix together
with mayonnaise, onion,
sweet pickle relish, horseradish and mustard.
Salt and pepper to taste.
With a spoon or pastry bag, fill the egg halves with
the yolk mixture.
Garnish with paprika.
Chill until serving.
