Bodfish Bob's Smoked Salmon Croquettes

A favorite at the Bodfish Cafe.

Ingredients:

3/4 c. cooked salmon (canned works well)
1/4 c. smoked salmon, minced
1 c. breadcrumbs, dried, coarse
1/3 c. mayonnaise
1 tsp red onion, pureed
olive oil

Preparation:

Mix together the fish, breadcrumbs, mayonnaise, and onion.

Form into 4 patties. Heat about 1/4 inch of oil in a heavy skillet over medium flame.

Add the patties and brown on both sides.

Drain on paper towels. Serve warm with tartar or cocktail sauce.

Serve these at your next Sunday brunch.
